Our mission, vision and values

Most olive oil sold in Morocco never says where it came from — not the tree, not the mill, not the hand that filled the bottle. We built Aït Elhaihi the other way round.

Our mission

To put in your hands an olive oil whose origin you can name: our groves in Tafetachte, our mill, our name on the bottle. We sell it ourselves, with no middleman — which is what lets us answer for every litre and quote you a fair price.

Our vision

For the olive oil of Essaouira province to be recognised for what it is worth, and for Aït Elhaihi to be one of the names behind it: a modern mill, a family you can identify, and oil you can trace back to the tree.

The olive trees

Our groves grow around Tafetachte, in Essaouira province. Dry ground, Atlantic wind, little water: the tree grows slowly, and the area is known in Morocco for its olives.

The harvest

Picking starts in autumn. Olives reach the mill the same day they come off the tree: the shorter the wait between branch and press, the better the oil. This step decides more than any machine does.

Intake and washing

On arrival the olives are de-leafed and washed in clean water — leaves, dust and small stones are removed before milling. A dirty olive makes oil that tastes of soil.

Extraction

The heart of the trade, and our main investment: a modern continuous extraction line in our own facility. Crushing, malaxation, then centrifugal separation. The oil comes out clean, without waiting, and goes straight into storage.

Storage

The oil rests away from light and air, in sealed tanks. It's light, heat and oxygen that damage olive oil — not time itself.

Filling

We fill to order, in 1 L, 5 L and larger volumes for big families, restaurants and resale. The oil doesn't sit bottled for months before it leaves.

Yes. Extraction is cold, in our own facility, on a modern continuous line with up-to-date equipment, and the unit is ONSSA-approved. That is what takes the fruit to oil quickly and cleanly, without the olives sitting and waiting and without heating the paste.

How should I store olive oil?

Away from light and heat, tightly closed, somewhere cool. Don't leave it next to the stove or on a windowsill: light, heat and air are what spoil oil, not time.
